Tofu as an egg replacer:

Chocolate Brownies (wheat, sugar & dairy-free)

make in 9 x 13 pan

In a mixing bowl mix together:

2 1/2 cups amaranth flour

1 1/2 tsp. baking powder

1/4 tsp. sea salt

1/2 cup chopped walnuts

In a stainless steel pot heat over a low flame, until melted and a smooth consistency:

3/4 cup soy milk

1 1/2 cups natural chocolate chips (unsweetened) or 1 cup cocoa powder

2 tsp. vanilla extract

1 3/4 cups fructose granules

1/2 cup + 2 T unrefined corn oil

In blender, blend:

12 oz. silken tofu

3/4 cup filtered water

Add liquids together, add to dry mixture, mix well; pour mixture in a lightly oiled casserole dish (9 x 13), glass or steel, and bake in a preheated oven at 375 for 25-35 minutes, until firm and a knife goes in and pulls out of cake easily .

* * * The Phila. Inquirer reported Dupont will sell FMC’s soybean herbicide. Dupont Co., Wilmington, agreed to distribute and sell FMC Corp’s sulfentrazone herbicide in the US soy bean market. Details of the 7 year contract were not disclosed. Dupont hopes the chemical will be used on 5-7 million acres of soybean crops. In 1999 and growing to 30 million acres in a few years. Dupont spokesman Mike Ricciuto said, an estimated 73 million acres of soybeans are planted in the US each year. FMC will continue to market the herbicide for the US tobacco market.

All the more reason to buy organic!

* * * I had a great time volunteering at the Appel Farm Arts and Music Festival on June 6th. It was wonderful how well all the volunteers worked together to provide delicious healthy vegetarian food for this event. Janet’s 11 year old daughter Corinne and Cory’s 11 year old daughter Gretchen did an excellent job serving the customers. It was uplifting to also see the positive responses from the 800+ customers that we served.
