VSSJ DINNER at the BURLINGTON COUNTY COLLEGE CULINARY CENTER
Monday April 6, 6pm

Join VSSJ for a special dinner, prepared by BCCCC culinary students!
Diners will have a choice of 5 appetizers, 5 entrees, and 2 or 3 desserts (all vegan).
Seating from 6pm to 6:45pm (please note that arrivals after 7pm may not be served).
Please contact us by 3/29 regarding gluten-free and other options.
Pre-payment is required by Sunday March 29.

- Carrot curry soup with tarragon oil
- Bibb and endive salad with tomato and green apple dressing

- Smoked portobello with quinoa and asparagus
- Deep fried tofu with soba noodles and vegetables
- Curried vegetables with basmati rice
- Barley risotto with black beans, cilantro, jalapeno, lemon zest
- 3 bean chili with vegan corn bread
3rd course-pick one
- Fresh Berries with mint, vanilla simple syrup, lemon zest
- Coffee granita
- Canteloupe soup with lime zest

Our next event is Monday August 15th at 7:00pm Discover the nutritional benefits of sprouting and learn this easy kitchen gardening technique that anyone can do. Sampling will be provided! The Vegetarian Society of South Jersey has teamed up with Wholefoods Market in Marlton, NJ for meatless Mondays. On Monday June 27th participants got to sample meat alternatives for the 4th of July -compliments of Wholefoods. Janet Erickson, President of VSSJ presented an informative talk on the benefits of a vegetarian diet (other than health). Participants received lots of great handouts to read at home and a lot to think about concerning their food choices. Below is info on upcoming workshops.

July 11th ” Whole Grains” presented by the Vegetarian Society
of South Jersey! Learn about all the whole grain options out there and how easy they are to prepare. Do you know which ancient grain is a complete protein? Find out the answer and much more. July 18th “Vegetarian Diet 101”
Attend this workshop courtesy of the Vegetarian Society of South Jersey to learn more about the health benefits of a meat-free diet. Receive a free Vegetarian Starter Kit and Whole Foods Market goodie bag. Tasty samples and recipes will be provided!
July 25th VSSJ & Chef Erin will be creating quick & easy vegetarian meals. In this hands-on workshop, you’ll also learn options for eating healthy throughout the hot summer days.
Below is the recipe for one of the donated items for our Vegan Bake sale held at our Spring potluck on Saturday April 16th. This recipe is adapted from the “VegNews Cookie Cookbook”. You can substitute orange juice for the bourbon.
2 1/2 cups pecans, toasted and finely chopped
1 cup graham cracker crumbs
1 cup dark brown sugar, packed
1/2 teaspoon salt
2 tablespoons maple syrup
1/4 cup bourbon
1 teaspoon vanilla
7 ounces dark chocolate
1. In a medium bowl, stir together pecans, graham
cracker crumbs, brown sugar, and salt until well
combined. Add maple syrup, bourbon, and vanilla,
stirring thoroughly. Use your hands to make sure the
mixture becomes fully incorporated.
2. Form mixture into walnut-sized balls, then place on a
cookie sheet and freeze for 2 hours.
3. In the top of a double boiler or in a medium stainless steel
bowl set over a pot of gently simmering water, melt
chocolate. Line a baking sheet with parchment paper.
Dip the frozen balls into the melted chocolate, then
place onto prepared baking sheet. Let sit for 15 minutes
or until firm.

Hopefully you were one of the lucky ones to attend our spring potluck on Saturday, April 16th. If not, you missed a great event! Despite the torrential downpour 28 members and friends celebrated Earth Day with a nice variety of great tasting vegetarian/vegan food, a recycle swap party & a vegan bake sale. Baked goods were donated by the officers of VSSJ and were sold out in the first 15 minutes! (see photo) Proceeds were donated to EarthSave. For more info on EarthSave click here.
GREAT NEWS!!! Next month on Saturday May 21st we are having another great event! Our theme is Here comes summer “ice cream” social potluck & bake sale. Proceeds from the bake sale will be benefiting the cow sanctuary. Besides bringing a dish to share for the dinner part of the evening you can help raise funds by bringing some of your favorite desserts to add to the bake sale and/or bring some extra change to purchase some tasty treats. Just remember to bring along the recipe or a list of the ingredients. For details click here.

In December Linda hosted a woman’s holiday cookie swap. Everyone had a great time and left with lots of delicious vegan cookies to share with family and friends. The recipe that I shared with everyone was from the following site. Low Fat Peanut Butter Cookies….YUUMMM!!
