- 3 stalks Celery
- 1/2 Onion
- 1 clove Garlic
- 3 carrots diced
- 1 can cannoli beans
- 1 can chopped tomatoes
- 1 bag frozen spinach
- 1 can or frozen corn
- 1 can or frozen peas
- 1 can or frozen string beans (or a bag of mixed frozen veggies)
- 1 cup long grain brown rice
- 2 tablespoons Italian spices
- 1 container of low sodium veggie broth (I like pacific brand )
Use food processor to Chop celery onion and garlic. Sauté in large soup pot with small amount broth and 1 tablespoon seasoning
Add rest of ingredients and bring to boil than turn to low until rice is cooked.. about 20 minutes

Instant pot set to sauté mode and sauté onions, celery and garlic in small amount broth with 1 tablespoon seasoning. Add rest of ingredients and set to soup mode (10 minutes with quick release)
